Breakfast Brownies with Cheesecake Frosting

Who says brownies belong only to dessert time? These fudgy breakfast brownies are paired with a light, tangy cheesecake frosting that makes them perfect for a lazy weekend brunch or a quick weekday grabandgo. The combination delivers cocoarich richness, a subtle hint of breakfastfriendly sweetness, and the creamy indulgence of cheesecakeall in one slice.

Why Choose Breakfast Brownies?

Traditional brownies are dense, sugary, and best served after a meal. By tweaking the recipe, we can make a version that feels more balanced for the first meal of the day:

  • More protein: Adding Greek yogurt and a scoop of protein powder gives a sustaining boost.
  • Complex carbs: Wholewheat flour or oat flour provides longerlasting energy.
  • Less refined sugar: Using a blend of honey and maple syrup keeps the sweetness natural.
  • Portionfriendly: Cut into small squares and pair with a light frosting for a satisfying yet controlled treat.

Ingredients

Brownie Base (makes 12 squares)

  • 1cups wholewheat flour (or oat flour)
  • cup unsweetened cocoa powder
  • 1tsp baking powder
  • tsp salt
  • cup plain Greek yogurt
  • cup unsweetened applesauce
  • cup honey
  • cup pure maple syrup
  • 2 large eggs, lightly beaten
  • cup melted coconut oil (or butter)
  • cup dark chocolate chips (optional)
  • 1scoop vanilla whey or plantbased protein powder (optional)

Cheesecake Frosting

  • 4oz (cup) cream cheese, softened
  • cup Greek yogurt (plain)
  • 2tbsp honey
  • tsp vanilla extract
  • Pinch of lemon zest (optional, for extra freshness)

Method

1. Prepare the brownie batter

  1. Preheat the oven to 350F (175C). Lightly grease an 8inch square baking pan or line it with parchment paper.
  2. In a medium bowl whisk together flour, cocoa powder, baking powder, and salt.
  3. In a large bowl combine Greek yogurt, applesauce, honey, maple syrup, eggs, and melted coconut oil. Mix until smooth.
  4. If using protein powder, stir it into the wet mixture now.
  5. Gradually fold the dry ingredients into the wet mixture, stirring just until incorporated. Overmixing can make the brownies tough.
  6. Fold in chocolate chips, if desired.
  7. Spread the batter evenly in the prepared pan and smooth the top with a spatula.

2. Bake

  1. Bake for 2025 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. The brownies should be set but still slightly soft in the middle.
  2. Remove from oven and let cool completely in the pan. Cooling is essential for the frosting to set properly.

3. Make the cheesecake frosting

  1. In a mixing bowl beat the softened cream cheese until smooth.
  2. Add Greek yogurt, honey, vanilla, and lemon zest. Beat on medium speed until the mixture is light and fluffy, about 12 minutes.
  3. If the frosting is too thin, refrigerate it for 10 minutes; it will firm up.

4. Assemble

  1. Once the brownies are fully cooled, lift them out of the pan using the parchment paper.
  2. Cut into 12 even squares.
  3. Spread a generous dollop of cheesecake frosting on top of each square, or pipe a decorative swirl if you prefer.
  4. Serve immediately, or store in an airtight container in the refrigerator for up to three days.

Tips & Variations

  • Make it vegan: Use plantbased yogurt, replace the eggs with a flax egg (1tbsp ground flaxseed + 3tbsp water), swap cream cheese for a vegan alternative, and use maple syrup as the sole sweetener.
  • Add fruit: A handful of fresh raspberries or blueberries folded into the batter adds bursts of tartness.
  • Nutty crunch: Sprinkle chopped walnuts or pecans on the frosting for extra texture.
  • Morning boost: Incorporate a tablespoon of chia seeds into the batter for omega3 fatty acids.

These brownies are best enjoyed within 24hours of frosting; after that the frosting may become too firm.
