Post-Harvest Management of Mandarins

Mandarins are highly perishable citrus fruits that require careful handling from the moment of harvest until they reach the consumer. Effective post-harvest management is essential to minimize losses, preserve nutritional value, and ensure the fruit maintains its visual and sensory appeal.

Harvesting Practices

The quality of the final product is heavily dependent on the conditions at harvest. Mandarins should be harvested when they reach optimal maturity, characterized by the correct sugar-to-acid ratio and color development. Key harvesting guidelines include:

  • Timing: Avoid harvesting during wet conditions, as moisture on the skin increases the susceptibility to post-harvest decay.
  • Handling: Use sharp clippers to cut the stem close to the fruit. Pulling the fruit can cause "plugging," where a portion of the peel is torn away, creating an entry point for fungal pathogens.
  • Equipment: Use clean, sanitized harvesting containers and ensure field crates are smooth to prevent mechanical injury or skin abrasions.

Cleaning and Sorting

Once transported to the packing house, mandarins undergo a series of processes to clean and grade the fruit. This stage is critical for removing field heat and contaminants:

  • Washing: Fruits are washed in a gentle detergent solution to remove dust, field soil, and residual pesticides.
  • Fungicide Application: To prevent common storage rots like Green Mold and Blue Mold, food-grade fungicides may be applied in the wash water or as a post-wash spray.
  • Grading: Automated optical sorters or manual inspection teams categorize fruit based on size, color, and external defects such as bruises, scars, or insect damage.

Degreening and Waxing

Many mandarin varieties are harvested when the internal quality is high, but the skin still shows green patches due to climatic conditions. Degreening involves placing the fruit in controlled chambers with low concentrations of ethylene gas to stimulate the breakdown of chlorophyll. Following this, a thin coat of food-grade wax is often applied. This wax serves a dual purpose: it improves the appearance of the fruit by providing a natural-looking shine and acts as a barrier to reduce water loss, thereby extending shelf life.

Storage and Temperature Control

Temperature management is the most important factor in maintaining post-harvest quality. Mandarins should be cooled as quickly as possible to remove field heat.

  • Cooling: Forced-air cooling is the most effective method for citrus.
  • Optimal Conditions: The ideal storage temperature for most mandarin varieties is between 4C and 7C (39F 45F). Temperatures below this can cause chilling injury, while higher temperatures accelerate respiration, ripening, and fungal decay.
  • Humidity: Maintaining high relative humidity, ideally between 90% and 95%, is vital to prevent fruit shriveling and weight loss.

Packaging and Transport

Packaging must protect the fruit from physical impact while allowing for adequate ventilation. Corrugated cardboard boxes or mesh bags are commonly used. During transport, cold chain integrity must be strictly maintained. Fluctuations in temperature during transit can lead to condensation within the packaging, which significantly increases the risk of microbial growth.
