Nutrition labelling tolerances define the allowable deviation between the values declared on a food label and the actual composition of the product. They are a key element of foodlaw enforcement, helping regulators protect consumers while giving manufacturers realistic leeway for natural variation in raw materials and production processes.
Most jurisdictions base their tolerance rules on a combination of international standards (e.g., Codex Alimentarius) and national legislation. The European Union, the United States, Canada, Australia, and New Zealand each have specific provisions, but they share common principles:

To determine compliance, food business operators (FBOs) and authorities follow a simple formula:
Allowed range = Declared value (Declared value Tolerance %)
Example: A cereal declares 5g of sugar per 100g. With a 10% tolerance, the acceptable measured range is 4.5g 5.5g.
When the declared amount is very low (e.g., 0.5g per 100g), many regulations permit using an absolute tolerance (often 0.1g) rather than a percentage, because a percentage would produce an impractically narrow range.
Regulators may require that the average of a series of samples falls within the tolerance range, rather than each individual test. This accommodates normal batchtobatch variation while still ensuring overall accuracy.
