Black Bean & SweetPotato Soup
Makes 4 servings
Ingredients
1 tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
1 large sweet potato, peeled & cubed
2 cans (15oz) lowsodium black beans, rinsed
4 cups lowsodium vegetable broth
1 tsp ground cumin
tsp smoked paprika
Juice of 1 lime
Fresh cilantro, chopped (for garnish)
Directions
Heat oil in a large pot over medium heat. Saut onion until translucent, about 4minutes.
Add garlic and cook 30seconds.
Stir in sweetpotato cubes, cumin, and paprika; cook 2minutes.
Add beans and broth. Bring to a boil, then reduce heat and simmer 20minutes, or until sweet potato is tender.
Puree half of the soup with an immersion blender for a creamy texture.
Stir in lime juice, adjust seasoning, and serve topped with cilantro.
Chicken Tortilla Soup (Light Version)
Serves 6
Ingredients
1 tbsp avocado oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 tsp ground cumin
1 tsp chili powder
6 cups lowsodium chicken broth
2 cups cooked, shredded chicken breast
1 can (14oz) diced tomatoes, no salt added
cup corn kernels (fresh or frozen)
Juice of 1 lime
Wholegrain tortilla strips
Avocado slices, optional
Fresh cilantro for garnish
Directions
Saut onion, carrots, and celery in oil until softened, ~5minutes.
Add garlic, cumin, and chili powder; cook 1minute.
Pour in broth, tomatoes, and corn. Bring to a boil, then simmer 15minutes.
Add shredded chicken and heat through.
Stir in lime juice, taste and season.
Ladle soup into bowls, top with tortilla strips, avocado, and cilantro.
Fresh Salads
Quinoa & BlackBean Taco Salad
Serves 4
Ingredients
1 cup quinoa, rinsed
2 cups water
1 can (15oz) black beans, rinsed
1 red bell pepper, diced
1 cup cherry tomatoes, halved
cup corn kernels
cup red onion, finely chopped
cup fresh cilantro, chopped
2 tbsp olive oil
Juice of 2 limes
1 tsp ground cumin
tsp chili flakes (optional)
Salt & pepper to taste
Directions
Cook quinoa with water: bring to boil, cover, simmer 15minutes, fluff with fork.
In a large bowl combine cooked quinoa, beans, bell pepper, tomatoes, corn, and onion.
Whisk olive oil, lime juice, cumin, chili flakes, salt, and pepper; pour over salad.
Toss gently and garnish with cilantro.
Avocado & Mango Green Salad
Serves 3
Ingredients
4 cups mixed baby greens
1 ripe avocado, cubed
1 ripe mango, diced
cup toasted pumpkin seeds
2 tbsp extravirgin olive oil
1 tbsp white wine vinegar
1 tsp honey
Salt & pepper
Directions
Place greens in a serving bowl.
Top with avocado, mango, and pumpkin seeds.
Whisk oil, vinegar, honey, salt, and pepper; drizzle over salad just before serving.
